Mother’s Day Cupcake with strawberry frosting Recipe

Mothers Day cupcakesWhat’s better than a sweet treat for your special mum on mother’s day? one which has been made by your own fair hands!

Knowing you have made the cake will not only put a smile on her face but will give the day that extra special meaning.

Cupcakes can be made (with the help of an adult) by children and can be as simple or as decorative as you want them to be.

Before baking the cupcakes try and think of what mum’s favourite colour is? favourite flavor? and if you should add sprinkles?, we think sprinkles are always a necessity!

Below is a easy cupcake mix, strawberry buttercream and decoration recipe:

cooking utensilsIngredients you will need:

  • 150g butter
  • 140g self-raising flour
  • 10g cornflour
  • 3 medium eggs
  • 30ml milk
  • 1tsp vanilla extract
  • 12 tsp strawberry jam

For the strawberry buttercream:

  • 3 sticks unsalted butter at room temp
  • 4 1/2 cups confectioners sugar, sifted
  • 1/4 cup fresh strawberry puree
  • 1 1/2 tsp vanilla

How to make the fluffy cupcakes:

1 – Preheat the oven to 60°C/325°F/Gas Mark 3 and put cupcake cases in to your muffin tray.

2 – Put all ingredients into the bowl (apart from the jam) and whisk with an electric whisk until smooth.

plain cupcakes3 – Divide the mixture between cases filling each to 3/4 full. Bake for 25-30 minutes or until springy to the touch. Leave cakes to cool completely on a wire rack.

Tip: why not use a jug with a pouring nozzle as this makes it easier (and little mess) to do.

4 – Once cakes have cooled core out the middle and blob some jam in and replace the piece of cake you have just cut, pushing it down on top of the jam.

If you just want plain cupcakes do not core them and put jam inside, just leave them as they are.

To make the buttercream icing:
1 – Add butter, icing sugar (a cup at a time) and beat until blended – this can usually take around 5 minuites.
2 – Add the puree and vanilla and beat until it is light and fluffy, approx 2-3 minuites.
3 – Frost the cupcakes until your frosting is gone (or in our case eaten!)
