It’s been a baking bonanza over the last few weeks with the Great British Bake-Off and with the final on Tuesday we will see which baker will rise to the challenge and which will be left soggy eyes as they wipe away their tears.
The Great British Bake-Off has been filled with tears, laughter and Paul Hollywood’s shirt – which make us want to go take some Salsa lessons.

i love a good old mince Pie
We don’t like traditional Christmas pudding but we do love a raspberry and chocolate sponge cake. Super quick and easy too! Take a chocolate swiss roll and cut 2cm thick, line a bowl with it as you would a trifle, fill with frozen summer fruits and pop another layer of swiss roll to seal. Prepare well in advance and pop in the freezer, it can be taken out on Christmas eve ready for the big day!

Can’t beat warm mince pies from the oven with a dollop of cold brandy cream. It makes the house smell lovely too.
Scottish Raspberry Meringue Roulade
I’m not keen on Christmas Pudding so I do a boozy trifle which is made with fruit I’ve grown myself and frozen earlier in the year. Homegrown spuds and veg are also essential ingredients for Christmas Dinner – so much nicer knowing you grew them yourself!

This year I am on a sugar craft course so my cakes this year will be exciting, I am making a Santa on a sofa cake. 😉 So can’t wait for that…

My favourite biscuit at Christmas brings back happy memories. When my children broke up for their Christmas holiday, we would make up a batch of Shortbread, then they would roll it out and use all sorts of cutters mostly Christmassy but they could have been Easter ones also. After they were baked I would mix up icing and made it all sorts of different colours, and put it in piping bags and they would do all the decorating of them. They would make up boxes with the biscuits in they would wrap them and give them as presents from them. What a lovely memory!

I make lim and cranberry bread and butter pudding for those that claim not to like christmas pudding. Use the cranberries instead of currents and make a lime curd instead of apricot jam. It always dissapears very quickly.

I love to make gingerbread cookies – I have different cutters suitable for all the different members of my family and each year they get a handful of specially customised ones. My sister hates ginger so she gets vanilla, my dad can’t eat dairy so his are dairy free. My grandparents do ballroom dancing so I have a ‘his and hers’ cutter that I stick the hands together and make them dancing partners. Delicious and cute 😀
The smell of Mulled wine, with lots of cloves, oranges and cinnamon. After a long walk in the winter cold. It’s such a warming Christmas smell, and taste!
