For the coleslaw:
- ½ red cabbage, finely shredded
- ½ white cabbage, finely shredded
- 3 carrots, grated
- 1 red onion, thinly sliced
- 1 apple, grated or finely sliced
- Handful of dried cranberries
- Handful of chopped parsley
For the dressing:
- 4 tbsp mayonnaise
- 2 tbsp Greek yoghurt
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp honey
- Salt and pepper to taste

🥗 Method
- Prep the vegetables Add the shredded red cabbage, white cabbage, grated carrot, sliced onion and grated apple to a large mixing bowl.
- Add festive touches Stir through the dried cranberries and chopped parsley for colour and sweetness.
- Make the dressing In a separate bowl, whisk together the mayonnaise, Greek yoghurt, Dijon mustard, apple cider vinegar, honey, salt and pepper until smooth.
- Combine Pour the dressing over the vegetables and mix thoroughly until everything is evenly coated.
- Chill and serve Refrigerate for at least 30 minutes to allow the flavours to develop. Serve as part of your Christmas dinner or buffet.
