How To Make Pumpkin, Feta & Olive Mini Savoury Muffins
Hosting a Halloween party? These would make the perfect addition to any Halloween buffet. Follow this recipe to make Pumpkin, Feta & Olive Mini Savoury Muffins:
What you will need:
- 250g pumpkin peeled
- 2 tblsps milk
- 50ml light olive oil
- 1 egg lightly beaten
- 150g self raising flower
- 1/2 tsp baking powder
- 75g feta cheese, crumbled
- 1 tblsps finely chopped
- Fragata pitted black olives
- 2 tblsps finely chopped fresh basil
Method:
1. Preheat the oven to 200°C
2. Grease 2 mini muffin pans
3. Cut pumpkin into 2cm pieces and place on a greased oven tray
4. Cook in a hot oven 200C for about 25 mins or until browned and tender
5. Transfer to a bowl add milk and mash until smooth
6. Allow to cool then stir in the oil and egg
7. Sift flour and baking powder into a large bowl, add pumpkin mixture, feta, olives and basil Stir until just combined, don’t over mix
8. Cook in a moderately hot oven 190c for about 15 minutes or until browned
9. Allow to cool for 5 minutes before turning out onto a wire rack
10. Serve warm or cold
