Easter Vanilla Cupcake Recipe

As Easter break approaches and the weather doesn’t seem to be turning it looks like the kids will be trying to find ways to keep themselves entertained indoors.

If you are looking to do some fun baking with the kids over the Easter holidays, why not try this fun, easy and slightly messy vanilla cupcake recipe.


 

For the cupcakes you will need:

 

  • 220g margarine or butter, at room temperature
  • 220g caster sugar
  • 2 large eggs, beaten
  • 220g self-raising flour, sifted
  • 2 tbsp low-fat vanilla yogurt

For the icing you will need:

  • 80g unsalted butter, at room temperature
  • 250g icing sugar
  • 25g low fat vanilla yogurt
  • Mini eggs or other fun Easter chocolates to decorate

Step 1) Get your pinny ready (and your child’s one too, it’s likely they will need it) and preheat your oven to 180°C/350°F/Gas Mark 5.

Step 2) Line a cup cake/muffin tray with fun Easter paper cases.

Step 3) In a bowl, beat together the butter and casting sugar until it’s light and fluffy – this should not take too long. Add eggs a little at a time, then fold in flour and yoghourt.

Step 4) Spoon the mixture into the paper cases until half full.

Tip: Using a spoon to fill the cases can become messy so why not use a pouring jug to do it!

Step 5) Bake cupcakes int he oven until golden brown and springy to touch. Use a skewer to test and if it comes away clean the cakes are ready. Place them on a wire rack to cool.

Step 6) Prepare the icing by beating the butter and icing sugar until pale and mixed well. Add the yogurt and continue to bat on medium to high speed until icing is fluffy.

Step 7) Fill into a piping bag with star nozzle and in a circular motion swirl the icing around each cake.

Step 8) Decorate with Mini Eggs, glitter and other fun edible accessories.

….and your done! now all you have to do is wait around five minute’s (even if that) before big and little fingers gobble them all up and you have to make more.

These cupcakes would be perfect for when family and friends come round and what’s better is your child can take pleasure in knowing they helped out too.
