Ingredients for Malteser Tiffin Recipe
- 200 grams milk chocolate (any will do)
- 100 grams unsalted butter
- 2 tablespoons golden syrup
- 130 grams digestive biscuits
- 135 Maltesers
- 200 grams milk chocolate for topping
- 1 tablespoon golden syrup for topping
- 35 grams unsalted butter for topping
Steps
- Prepare your tin: Line a 20cm square baking tin with baking paper, leaving an overhang on each side so you can lift the tiffin out cleanly once set. Set aside.
- Crush the biscuits: Place 130 grams of digestive biscuits into a zip-lock bag and bash with a rolling pin until you have a mixture of fine crumbs and larger chunks; you want both for texture. Don’t crush them too finely. Tip into a large mixing bowl and set aside.
- Melt the base chocolate: Break 200 grams of milk chocolate (any will do) into pieces and place in a heatproof bowl with 100 grams of unsalted butter and 2 tablespoons golden syrup. Set over a pan of barely simmering water and stir gently until completely melted and smooth. Remove from the heat.
- Mix everything: Pour the melted chocolate mixture over the crushed biscuits and stir until every piece is coated. Add 135 Maltesers and fold in gently – try not to break them up too much; you want whole Maltesers throughout.
- Press into the tin and chill: Tip the mixture into the prepared tin and press down firmly and evenly using the back of a spoon or a piece of baking paper. Get it as flat and compact as possible; this helps the tiffin slice cleanly later. Pop it in the fridge while you make the topping.
- Make the chocolate topping: Break 200 grams of milk chocolate for topping into pieces and place in a heatproof bowl with 1 tablespoon golden syrup for topping and 35 grams unsalted butter for topping. Melt over a pan of barely simmering water, stirring until completely smooth. Remove from the heat and leave to cool for 5 minutes
- Top and set: Pour the topping evenly over the chilled base and spread to the edges with a palette knife or the back of a spoon. If you want to press a few extra Maltesers into the top, now is the moment — it looks brilliant and tastes even better. Return to the fridge to set completely.
- Slice and serve: Once fully set, lift the tiffin out of the tin using the baking paper overhang and place on a chopping board. Using a sharp knife, cut into 16 squares. For the cleanest cuts, run the knife under hot water and dry it between each slice.
